Happy Cupcakes


Ever since I ate my first cupcake in the US, I planned to do them on my own. Since I never had a decorating tube to make the frosting, it took years till I made my first cupcakes this weekend for a BBQ with friends. The cupcakes are filled with dark chocolate chips and cornflakes and the frosting is made with white chocolate and cream cheese. To my surprise, the frosting was very easy to create and everybody loved my cupcakes.

Recipe:

  • 100 g chocolate chips
  • 50 g cornflakes
  • 200 g flour
  • 2 tsp baking powder
  • 1 egg
  • 175 g sugar
  • 1 packet vanilla sugar
  • 100 ml neutral oil
  • 150 g yogurt
  • 200 g cream cheese
  • 150 g white couverture chocolate
  • 100 g butter (room temperature)
  • some food coloring
  • supar sprinkles

Preheat oven to 180° (air circulation 160°). Place paper forms into the muffin baking sheet. Shred the cornflakes with a mortar, add the chocolate chips and mix everything. Afterwards add flour and baking powder. Mix the egg with sugar, vanilla sugar, oil and yogurt. Work in the flour blend. Then put the dough into the paper forms and bake for 20-25 min. Afterwards let the muffins cool down. 
For the frosting, melt the couverture chocolate in a water-bath and let it cool down afterwards. Mix the cream cheese with a mixer until it is very creamy and next add the butter, couverture chocolate and food coloring. Put the frosting into the fridge, that it becomes tighter. At the end, put the frosting with a decorating tube onto the cupcakes and finish them with some sugar sprinkles.
