Tuscany Burger


Since Tom got his Weber grill a couple of months ago we're grilling a lot. After making a lot of standard things, we're now looking for fun recipes to try on the grill. On the weekend we made these delicious Tuscany Burgers with rosmary potatoe wedges. They were so delicious - mostly because we had really great meat. I really reccommend to buy meat from a regional butcher - this ensures great quality! 
Now here's how we did it... 

Pattys:

  • 300 g beef mince (from the shoulder)
  • 1 TBS Aceto balsamico
  • 1 TBS finely chopped rosemary
  • 1,5 small garlic cloves
  • 1 TSP seal salt
  • 1 TSP black pepper
     

Burger:

  • 30 g Parmesan (room temperature)
  • 2 slices rustic Italian white bread
  • olive oil
     

Wedges:

  • 6 small potatoes
  • 1 TBS rosemary
  • 1 TSP sea salt
  • 2 TBS olive oil
     

First of all, slice the potatoes, season them with rosemary, sea salt and olive oil and put them on a baking sheet (please use baking paper!). Bake them until the wedges become slightly brown. 

Mix the patty ingredients together and form 2 loose pattys (2,5 cm thick). Don’t compress the meat too much otherwise the pattys become hard when on the grill. Use a spoon and press into the middle of the patty before grilling  (this stops them rising). Then grill the patties until they are cooked through, take them off the grill, put on the Parmesan and let them rest for 2-3 minutes. 

In the meantime, put some olive oil on the slices of bread and grill them for 1 min. Put the rest of the Parmesan onto the bread. Then put a patty on each bread slice and serve immediately together with the wedges.
