One of my new year's resolutions is to stay fit and healthy. I try to go to the gym at least two times a week and also go for walks way more often. I also try to eat healthy - even though I would die for any kind of sweets. This soup is perfect for dinner after you've been to the gym. It warms you up and is pretty low in calories. For this soup I used beef broth and added raw vegetables. When the vegetables were soft-boiled I poured in coconut milk and sqeezed some fresh lemon juice into the soup. I would recommend to make more soup so you can bring some to work the other day. Very delicious!
