I'm having cereals for breakfast everyday because that takes the least time to prepare. With these berry-cereal-muffins I found a great alternative to my routine. The good thing is that they are still delicious if they are 2-3 days old (if kept in a closed plastic container) and you can easily take them with you in the morning. And they are also quite healthy.
What you need:

  • 200 g spelt flour
  • 2 tsp baking powder
  • 60 g crunchy muesli
  • 250 g fesh berries (also works with frozen ones)
  • 1 egg
  • 1 packet vanilla sugar
  • 100 ml neutral oil
  • 200 g yoghurt

Preheat oven to 180° (air circulation 160°) and place paper forms into the muffin baking sheet. Blend flour, baking powder and chrunchy muesli. 

Stir the egg with vanilla sugar, oil and yoghurt. Quickly stir in the flour blend. Cautiously fold in the berries. Put the dough into the paper forms and bake it for 20-25 min.
