Oreo Cupcakes


As the biggest fan of Oreo cookies I thought it is time to convert this passion into a cupcake. I almost freaked out when I found this recipe. And I can tell you: it is probably the most delicious little thing I've ever eaten. To cut a long story short, here is the recipe (get started now!): 

  • 32 Oreo cookies
  • 2 eggs
  • 130 g sugar
  • 150 g butter
  • 100 g flour

For the frosting (chocolate mouse):

  • 100 g cooking chocolate
  • 150 ml cream
  • 4 eggs

Preheat oven to 180° (air circulation 160°) and place paper forms into the muffin baking sheet. Put a single Oreo cookie into each paper form. 

Mix two eggs, add melted butter and gradually pour in the flour. Now crumble 14 Oreo cookies and put them into the dough. Pour the dough into the paper forms and let it bake for 12 min. 

Beat the cream until it is stiff and put it into the fridge. Separate the other four eggs. Whisk up the egg white. The egg yolk you need to whisk up over boiling water. Melt the chocolate in a bain-marie. Then add the chocolate to the egg yolk. Carefully add the egg white and when it cooled down to room temperature also gently fold in the whipped cream. 

When the chocolate mouse cooled down, fill it into a piping bag and decorate the cupcakes. Halve the remaining six Oreo cookies with a knife and use as a decoration.
