Olive Muffins


If you think of muffins, you might come across something with chocolate, berries, or other sweet fillings. At least that’s how it was for me, till a friend of mine served those super delicious olive muffins at one of her dinner parties. I loved those muffins that looked just like the sweet ones you know, but tasted so different. I bet you’ll love it to. Here’s the recipe:

  • 200 g flour
  • 50 g wheatlet
  • 2 tsp baking powder
  • 1 tsp salt
  • 100 g green olives (stoneless)
  • 80 ml neutral oil
  • 2 eggs
  • 250 ml buttermilk
  • 50 g gratin cheese

Preheat oven to 180° (air circulation 160°) and place paper forms into the muffin baking sheet. Mix flour, wheatlet and salt and cut olives into thin slices. Stir oil, eggs and buttermilk and add olives. Work in the flour blend quickly and fill the dough into the paper forms. Let the muffins bake for 10 min. Then disperse gratin cheese on top of the muffins and let them bake for another 10-15 min.
